The Seafood Martini
3 pcs. 21/25 raw shrimp
3 pcs. 21/25 raw scallops
1 Tbsp. cajun seasoning
Fried Tortilla Strips [see below]
Crabmeat Salad [see below]
- Season shrimp and crabmeat with cajun seasoning
- Heat frying pan with a little oil
- Place shrimp and scallops in pan and brown both sides, 3-5 min.
- Remove from pan
- Take a martini glass and place fried tortilla strips in glass
- Atop of strips, place 2 Tbsp. of crabmeat salad in the middle.
- To left of crabmeat, place 3 pieces of scallops
- To right of crabmeat, place 3 pieces of shrimp
- Behind salad, add a carrot flay and green onion brush
- Garnish with lemon and a side of cocktail sauce
Fried Tortilla Strips
2 each tri-color flour tortilla shells
- Cut in half, then julienne.
- Place on sheet pan; bake in oven at 350' for 10-12 minutes, until
crisp.
Crabmeat Salad
2 Tbsp. sour cream
2 Tbsp. mayonnaise
1 Tbsp. fresh cilantro
1 Tbsp. lemon juice
1 oz. Corn kernels
1/4 avocado - diced
1 Tbsp. old bay seasoning
4 oz. Lump crabmeat
- Mix all ingredients except crabmeat. Mix well.
- Fold in crabmeat gently to avoid breakage.
