Duck Quesadilla with Blackberry Sauce
1 cup pinto beans
1 cup bag frozen corn (5 oz.)
1 bunch fresh cilantro chopped (reserve 1/4 cup)
salt and pepper to taste
1 pkg 10" flour tortilla shells
1 Block pepper jack cheese grated
blackberry sauce
1/2 cup blackberry jam
2 Tsbp chopped cilantro
- Cook beans according to package directions.
- Thaw corn.
- Chop fresh cilantro.
- Mix bean and corn, salt and pepper to taste.
- Heat bean and corn mixture. Remove from pan.
- In clean skillet, no oil, warm tortilla shells lightly on both Sides.
- place grated cheese atop of tortilla shell.
- add warm bean/corn mixture.
- once cheese has melted, place second tortilla atop of mixture. Remove from pan.
- cut in 4 pieces.
For Sauce
- Heat blackberry jam and cilantro just until liquified.
Arrange quartered quesadilla pieces on plate, drizzle sauce over Quesadilla and sprinkle with chopped cilantro.
