Duck Quesadilla with Blackberry Sauce

1 cup pinto beans
1 cup bag frozen corn (5 oz.)
1 bunch fresh cilantro chopped (reserve 1/4 cup)
salt and pepper to taste
1 pkg 10" flour tortilla shells
1 Block pepper jack cheese grated

blackberry sauce
1/2 cup blackberry jam
2 Tsbp chopped cilantro

  1. Cook beans according to package directions.
  2. Thaw corn.
  3. Chop fresh cilantro.
  4. Mix bean and corn, salt and pepper to taste.
  5. Heat bean and corn mixture. Remove from pan.
  6. In clean skillet, no oil, warm tortilla shells lightly on both Sides.
  7. place grated cheese atop of tortilla shell.
  8. add warm bean/corn mixture.
  9. once cheese has melted, place second tortilla atop of mixture. Remove from pan.
  10. cut in 4 pieces.

For Sauce

  1. Heat blackberry jam and cilantro just until liquified.

Arrange quartered quesadilla pieces on plate, drizzle sauce over Quesadilla and sprinkle with chopped cilantro.
